So I love Banana Bread.
I was obsessed with the banana bread bagels for the longest time. I could eat an entire loaf of banana bread per day and be just fine. ( I top mine with cream cheese or butter depending on the type of banana bread….)
With all the holiday festivities, I couldn’t use up my bananas as fast as usual. So I had about 12 bananas in prime condition for banana bread and other goodies!
I planned on making my own Cinnamon Oat Banana Bread, but had so many bananas I figured I should try out a few other recipes for fun!
Cinnamon Oat Banana Bread
- 4 ripe bananas (can be made with 3 if that’s all you have!)
- 1 egg
- 1/3 cup melted butter
- 1 cup sugar
- 1 tsp. vanilla
- 1 tsp. baking soda
- Pinch of Salt
- 1 1/2 cups of all-purpose flour
- 1/4 cup brown sugar
- 1/3-1/2 cup oats
- 1 Tbsp. Cinnamon (can add more or less, to taste)
- 1/4 cup Hershey’s Cinnamon Chips (optional)
- 1/2 tsp. Nutmeg (optional)
Preheat oven to 350 degrees.
Mix/mash bananas.( Use whatever method you like! When making bread I’ll almost always use a standing mixer. No particular reason… just do!)
Then add egg, melted butter, and vanilla. Once this is mixed, you can add the sugar, salt, and baking soda.
Add flour. Don’t overmix! (I try to get it mixed within 30 seconds. 60 seconds is my max, typically.)
Pour batter into pan(s).
Mix topping in a bowl.
Pour topping on top of loaves before putting in the oven. Then take a knife and swirl the topping into batter slightly. This pulls a little of the cinnamon sugar mixture into the batter. But not all of it! We want it to be a crumble topping for the most part!
Bake in a loaf pan for 50-60 minutes (I check it with a toothpick, and take it out when it comes out clean!). I often bake in mini loaf pans so I can give them away! This takes roughly 30-40 minutes.
Pull out and enjoy!
Other recipes I tried today? Because I had lots more bananas…so I had to make more. Right? 🙂
I was SO excited for this one! I felt like there were so many flavors that they may been competing. I think I’ll try this one again, but with a few less ingredients. The coconut made the texture very different. It feels like a cake and not bread. Which… isn’t a bad thing. 😉
I loved how this one rose and was colored. After trying it, I felt like it should more appropriately be named Sweet Whole Wheat Bread. It only had a banana after taste really. I think I’ll play with this recipe more! I’m going to add 1 more banana, and maybe some cinnamon and more honey? It was less moist than the other 2 breads. Not dry, though! Just more like whole wheat bread. I think this recipe has real potential to be an all-star with a little tweaking….Plus, how great is it that it’s applesauce and banana… healthier!
After trying all three of these, and giving some to my panel of judges…. they all voted mine was the best! They liked the flavor and texture the best. But… maybe they’re bias? You better try out the recipe for yourself to double check! 😉
