Scones. Scones. Scones.

So I recently heard about a Bed and Breakfast that made amazing scones. Apricot.

First of all. Apricot is not my favorite flavor. Not sure why, but it’s never been my cup of tea. But something about these scones just called out to me. So I decided to make them.

As I searched through Pinterest for a recipe, I found more scones that were calling out to me. (This happens to everyone, right?) So I decided to make a big breakfast with 3 types of scones. My friends all laugh, because I do this type of thing a lot. The saying “go big or go home” is practically my life motto.

So here are the scones I tried out, and my thoughts on them!

Blueberry Lemon Scones

I used the recipe from Sally’s Baking Addiction. I love this blog! And she gave great tips for how to prepare the butter. I didn’t grate it like her, but I chopped it finely, and I did freeze it. I agree that this is helpful!

One thing that I did change is the amount of liquid. As I mixed, I felt the dough was not wet enough. (The dry mixture wasn’t integrating fully, and the dough refused to shape in to a ball. It was far too crumbly.) I added about 2 Tbsp. more cream. I was really pleased, and my taste-testers agreed they were perfectly moist! They also mentioned they liked how the flavor was even distributed throughout the scone dough.

Apricot, Oat, & Walnut Scones

Remember how I told you that I don’t love apricot? Well, funny enough these were my FAVORITE scones I made. These were so delicious. The dough and flavors just were perfect. I found a copycat recipe here for the famous Bed & Breakfast version, and I tweaked it just a little. So mine weren’t as fluffy. 🙁 But they were OH SO GOOD! 

 

 

Apricot

The tweaks I made were simple. I added just a little more milk. About 1 Tbsp, but you can add more if you’re dough isn’t wet enough. And I added chopped walnuts. I just had some on hand, and didn’t plan on adding them. But it occurred to me and I just had to try it out. We all loved the texture it gave them! I am going to make these again FOR SURE.

Chocolate Chunk Scones

Now, I have a roommate who is a little pickier. She just likes simple food. So I didn’t think she’d like either of the other scones. But I knew she liked chocolate chip scones. So… I threw this one in for her benefit really. I didn’t tweak the recipe at all. BUT I was sorry I didn’t. She actually like the others, even though she loves the chocolate chunk. She mentioned this recipe just wasn’t as moist as the others, and if you didn’t have a bite with chocolate in it, it just wasn’t that good. The scone dough didn’t have enough flavor for her. (I agreed after I tried it.) SO. If I make these again I’ll add more vanilla, cream, and chocolate chunks… or even another flavor. (Coconut? Nuts?)

Once you make the scones, you can top them with a drizzle of ganache or icing. Or you can leave them plain like I did. I like storing them in a box, and that way I can layer them without worrying.
