Red, White and Blue Muffins!

I wanted to make breakfast for my nephews and niece, and with the holiday…I had to make something red, white, and blue. I found two of these recipes, tweaked them a little, and created 3 fun muffins!

Blueberry Lemon Muffins

I love using cake mix shortcuts anytime I can. So I wondered about using them for a quick muffin recipe! I used a recipe for Mostly Homemade Mom as a my inspiration for the lemon blueberry.

I chose to switch out the yellow cake mix for a lemon cake mix, obviously…

I liked how it turned out, too! I ran out of oil for this recipe and so I tried using Crisco. I didn’t love how it turned out. The texture and baking didn’t go as normally as I’d expect, so I wouldn’t recommend that substitution when you make it! But it tasted great!

Red Velvet Strawberry Muffins

I looked at so many ideas for making red velvet muffins, and lots of the recipes looked delicious! I was in a hurry to make these (hungry nephews tend to rush you…), so I decided that I wouldn’t make the “from scratch” recipes. I hadn’t liked the crisco substitution, so I tried melted butter. I thought it was a much better substitution for the oil.

The thing I would change in the recipe is actually adding fewer strawberries…and adding some mini chocolate chips! I just felt like it needed a little more oomph. 🙂

White Chocolate Macadamia Nut Muffins

These I followed the recipe from Together as a Family.This was my personal favorite muffin! I followed the recipe exactly, and the batter was EXTREMELY thick. It was cookie dough. I couldn’t in any world imagine how these would become magically light and fluffy, so I added additional milk. I added about 1/2 cup. So if you make these, add milk until it becomes the normal muffin texture.  I would also recommend being careful not to overbake these because you DON’T want them to be dry.

Overall, this was a fun breakfast for my nephews and niece. (Their personal favorite was the red velvet.)
